These tacos are really amazing. They take so little time to make, they are full of nutrients and fibre yet are absolutely delicious. They take a total of about 20 minutes to make with a cooking time, for the cauliflower only, of about 10 mins.
3 Tbsp olive oil
1 Tbsp jerk seasoning
1 small head of cauliflower cut into small florets – about 6 cups
1 mango, peeled and chopped
1 small red pepper chopped
½ cup diced red onion
1/3 cup roughly chopped cilantro
Juice of 1 lime
1 cup plain yogurt, greek yogurt or dairy free yogurt of choice
Zest of 1 lime
1 small chipotle chili pepper in adobo sauce
2 cloves garlic chopped
½ tsp cumin
Salt and pepper to taste
10 corn tortillas warmed**
2 cups shredded red cabbage
Heat oil in large sauce pan over medium high heat. Add cauliflower and cook and until slightly charred – about 8 minutes. Add oil if the pan is getting too dry.
Stir in jerk seasoning and heat for 30 secs.
Salsa: mix together mango, red pepper, red onion, cilantro and lime juice.
Sauce – mix together yogurt, avocado, lime zest, chipotle chili pepper, garlic, cumin, salt and pepper in a food processer blending until smooth.
To serve: divide cauliflower between heated tortillas, top with shredded cabbage, salsa and drizzle with sauce.
